Blueberry Coconut Smoothie REBLOG @StyleNectar

Blueberry Coconut Smoothie

Do you enjoy looking and feeling your best?  Then this energy boosting, make-yourself-radiant Coconut-Blueberry Shake is right up your alley!

Plus it tastes amazing! (Think cross between malted milkshake & nut-brittle candy.)

I predict this exotic combination of flavors will fall into your weekly repertoire.  It's a recipe I can whip up on the busiest of days knowing I'll love the taste and be doing something great for my body.

Wild blueberries pack a healthy punch of phytonutrients, antioxidants & anti-inflammatories, while coconut milk nourishes and moisturizes the hair and skin.  Toasted pecans provide 19 vitamins and minerals, protein and... well, you get the idea!  It's fabulous in every respect so you'll just have to try it:-)

Ingredients (Serves 2)

1 cup frozen wild blueberries

3/4 cup light coconut milk

2 tablespoons water

2 1/2 tablespoons toasted pecans (or substitute roasted almond butter or toasted almonds)

1 1/2 tablespoons honey or maple syrup

1/2 teaspoon vanilla extract

Method

In a blender combine the blueberries, coconut milk, water, toasted nuts (or nut butter), honey and vanilla extract.  Blend until smooth. Enjoy!

NOTE:  If you don't have a heavy-duty blender like a Vitamix, use Almond Butter (or another nut butter- preferably roasted) instead of the toasted nuts to ensure a silky-smooth shake.

BEAUTY AND THE BLUEBERRY

BEAUTY-FUL BLUEBERRIES

Blueberries aren't just great for muffins or topping your yogurt, they're perfect for maintaining beautiful skin. The blueberry is ranked number one in antioxidant activity by the U.S. Department of Agriculture. So enjoy snacking on this sweet fruit and reap the benefits.

The berry's dark blue color is the result of anthocyanins, or powerful antioxidants, that protect the skin from free radicals that can damage the collagen that keeps your skin firm. Blueberries are also full of vitamin C and vitamin E. The purpose of vitamin C is to help the body in skin renewal, which is essential to the skin. Eating blueberries makes you beautiful on both the inside and outside.

For inside beauty consume a blueberry smoothie. Here is an easy recipe:

3/4 cup blueberries
6 ounce lowfat vanilla yogurt
1 tablespoonful of organic honey
3 ice cubes
Blend well at high speed, serve immediately. Makes 2 servings.

For outside beauty make a masque. Here are 2 recipes:

1 cup of blueberries
1 cup of oats
5-6 almonds
2 tablespoonsful of honey
Blend into a fine paste. Leave on face until dry, about 15 minutes, and wash with warm water. Can use on body too.

1/4 cup blueberries
1 tablespoon honey
1 tablespoon olive oil
Mix well in blender. Leave on face for 5 minutes and wash off.

This masque is very hydrating leaving you with soft skin. May add 1 teaspoonful of sugar for exfolliation.

Here's to BLUE-tiful skin,

Amy
